Gluten Free Oat Muffins & Steps to make Sugar free Too

3/4 Cup Almond Flour/Meal

3/4 Cup Coconut Flour

3/4 Cup Flax Meal

( if you don’t want Gluten Free then omit the three flour’s above and use 1 1/2 cups of your flour of choice)

3/4 Cup Oat Bran ( you can omit this and just double one of the meals)

1 Cup Brown Sugar ( Sugar Alternative )

2 Teaspoons Baking Soda

1/2 Teaspoon Salt

1 Teaspoon Baking Powder

2 teaspoon Cinnamon

1 1/2 Cups Finely Shredded Carrots

2 Apples Peeled and shredded

1/2 Cup Dried Fruit of Choice or a mixture ( Raisins, Cranberries, Cherries, Blueberries )

1 Cup Chopped Nuts ( I did a mixture 1/2 cup Pecans 1/2 Cup Pepitas  you could add Chia seeds or Flax Seeds too.

3/4 Cup Milk  ( you can use  Soy, Almond, etc… )

2 eggs Beaten

1 Teaspoon Vanilla

 

Mix all ingredients until dry ingredients is moistened.  Do not over mix

 

fill muffin cups 3/4 full  if you go over don’t worry.  they do not rise that much.

 

Bake at 350 degrees for 15 to minutes

 

Yields about 18 – 24 muffins

 

the muffins are extremely moist.  Eat right away or store in the Refrigerator so they do not spoil.  Heat in the toaster oven or Microwave for 1 minute.

 

these Muffins have protein and extremely High Fiber.
